Lion’s Mane Tacos
Lion's Mane Tacos
Ingredients
- 1 large Lion's Mane mushroom about a pound. If cannot find Lion's mane, substitute queen- or king-sized oyster mushrooms.
- ½ yellow onion diced
- 2 tbsp Taco Seasoning Mix
Optional Toppings
- tortillas
- shredded cabbage
- oil-free refried beans or smashed beans
- cilantro chopped
- hot sauce or salsa
Instructions
- Shred the mushroom into pieces (the shreds shrink when cooked, so keep a little larger than the size you want). Set aside.
- Heat a skillet over medium heat. Add onions and sauté over medium heat, adding a splash vegetable broth or water if things start to stick. Cook until browned, about 3-5 minutes.
- Add shredded mushrooms. Do NOT add any liquid to the pan as mushrooms will release liquid as they cook. Sauté about 4 minutes until mushrooms are cooked and edges are browned.
- Add 2 tbsp. taco seasoning and cook another minute to allow spices to bloom. Season to taste with salt, soy sauce, or salt substitute as desired. Serve on tortillas with desired toppings.
Notes
- Tofu. Recommend using firm tofu that's been frozen and thawed as it makes a chewy, meaty texture that's a great chicken substitute in soup. Simply squeeze all of the liquid out of the thawed tofu and crumble into desired-sized pieces and use in place of the Lion's Mane mushrooms.
- Cauliflower florets
- Chickpeas
- Soy Curls. Rehydrate them per package directions and use in place of the mushrooms.
