Vegan Queso

I’ve made this queso for years! I don’t know where this recipe came from, it’s something we made at the fire station and has been a staple of mine ever since.

Ingredients

  • ½ Cup raw cashews or uncooked old-fashioned oats for a lower fat and nut-free version (or a combination, say half cashews/half oats)
  • 1 Cup vegetable stock
  • ½ Cup water
  • 3 Tablespoons cornstarch
  • ¼ Cup nutritional yeast
  • 1 Tablespoon lemon juice or lime juice
  • 1 teaspoon salt
  • 1 Tablespoon adobo sauce from a can of chipotle peppers in adobo sauce, or salsa. Use tomato paste if you don't want it spicy.
  • 2 oz tomato paste or more adobo or salsa
  • 1 clove garlic

Instructions

  • Add all ingredients into a blender. Bring the blender to high speed until smooth. 
  • If you have a high-speed blender, like a Vitamix, just keep the blender running on high until the sauce gets steamy and thick, about 5 minutes. If using a regular blender, pour blended mixture into a saucepan, bring to a boil, and simmer until thick.

Notes

This sauce works fabulously in mac and cheeze, and can be made without adobo if you don’t want a Tex-Mex style queso sauce.

      It’s right in the recipe. In the line item for cashews it includes using old-fashioned oats instead of cashews. Enjoy!
