Copy Cat Manischewitz Vegetable Soup Mix

Growing up, Manischewitz cellophane soup packs were the staple for starting delicious soups in our house. Unfortunately they are not vegan and contain added sugar, oil, and lots of salt. This is a WFPB version without sugar, salt, or oil!

Ingredients

Spice Mixture

  • 1 cup dried shiitake mushrooms whole or sliced. Find in the Asian aisle or Asian grocery stores
  • ½ cup nutritional yeast
  • ¼ cup sun-dried tomatoes NOT in oil, just dried. Find in pasta aisle or in dried fruit section in grocery stores.
  • tbsp onion powder
  • ½ tsp garlic powder
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp dried parsley
  • ½ tsp dried sage or poultry seasoning
  • ¼ tsp black pepper
  • ¼ tsp sweet paprika
  • ¼ tsp smoked paprika
  • ¼ tsp celery seed
  • ¼ tsp turmeric powder
  • 1 bay leaf

Bean and Grain Mix

  • cups dried green split peas
  • cup dried yellow split peas
  • cup barley
  • 1 cup dried navy beans or other small bean

Pasta

  • 1 cup small whole wheat pasta such as orzo, shells, ditalini, etc., uncooked

Instructions

  • Add all of the Spice Mixture ingredients into a blender or food processor and blend until powdered.
  • In a medium bowl, mix together the Bean and Grain mix.
  • Gather 8 half-pint jars. In each jar, add 1 tablespoon powdered spice mix and ½ cup bean and grain mix.
  • Measure 2 tablespoons uncooked pasta and put into either a small plastic bag and place on top of the grain and bean mix, or, to be plastic-free, put into one of 8 4-oz jars.
  • Secure jars with lids and label. Keep in your pantry until ready to use.

Using Soup Mix

  • In a medium soup pot, bring 7 cups of water to a boil. Set aside the pasta and pour the contents of the Spice, Bean, and Grain mix into the boiling water and stir well to combine. Cover tightly and simmer over low heat for 1½ to 2 hours, or until beans are tender, stirring occasionally.
  • Once beans and grains are tender, return to a boil and add dried pasta and cook about 10 minutes, until pasta is tender. You can also add ribbons of greens at this point too, if desired. Season to taste.
  • Alternatively, use in Lion's Mane Noodle Soup recipe.

Notes

For heartier soup, add vegetables during cooking, as desired.
